1. Heat the oil in a wok or large frying pan over high heat.
2. Add the chicken and fry, stirring for 1 minute, until the chicken is half-cooked.
3. Add the yellow bean sauce and stir to blend.
4. Add the red pepper, celery, cashew nuts, sugar and sesame oil and stir-fry for 2 minutes.
5. Add the water and stir continuously.
6. Remove from the heat when the mixture thickens.
7. Serve immediately, while it's still hot and steaming.
