Description: Oriental Stir-Fry

Ingredients for Oriental Stir-Fry
|
250g plain tofu
3 tbsp sunflower oil
100g French beans, topped and tailed
100g runner beans, sliced
100g baby sweet corn, halved lengthways
100g mangetout peas
2 carrots, sliced lengthways
100g bean sprouts
225g rice noodles, cooked, to serve
sesame seeds, to sprinkle
For the sauce:
100ml orange juice
2 tbsp soy sauce
2 tbsp toasted sesame oil
1 clove garlic, crushed
3cm-piece root ginger, grated
1 red chilli, deseeded and finely chopped
1 tsp muscovado sugar
1 tsp cornflour

Directions for Oriental Stir-Fry

1. Mix the sauce ingredients together. Set aside. 2. Pat the tofu dry and cut into cubes. Heat 1 tbsp oil in a large frying pan or wok and fry the tofu until golden. Add it to the sauce and set aside. 3. Add the remaining oil to the pan and fry the beans and seet corn for 2-3 minutes. Add the remaining vegetables and stir-fry for a further 2 minutes,
then pour over the sauce and tofu and cook until the sauce has thickened. Serve with rice noodles and sprinkle with sesame seeds.
