1. Slice beef thinly across the grain.
2. Tenderise beef slices with a meat mallet.
3. Add seasoning ingredients to the beef slices and mix well.
4. Cut the spring onions into 5cm lengths.
5. Heat a little oil in a non-stick wok.
6. Stir-fry the ginger and garlic until fragrant.
7. Add beef slices and stir-fry.
8. When beef is almost cooked, add in spring onions and cornflour mixture.
9. Once sauce is thick, remove from heat. Do not cover cook beef. Serve.
