Description: Red Bean Pudding with Coconut Milk
Servings: 2-3 servings
Ingredients for Red Bean Pudding with Coconut Milk

5 egg whites
½ measuring cup of red beans, cooked until soft
6 tbsp gelatine powder
2 measuring cups of water
600g coconut milk
1 measuring cup of milk
Seasoning:
1¼ measuring cups of sugar

Directions for Red Bean Pudding with Coconut Milk
|
1. Whisk egg whites until stiff. 2. Put gelatine powder and sugar in saucepan; stir with water, cook until dissolved. Add coconut milk and milk; bring to the boil. Let cook. 3. Stir cooled mixture into whisked egg whites; chill to semi-congealed, take out. Blend with electronic blender until paste thickens 4. Add red beans into mixture; stir. Pour into mould, put in fridge until congealed. Take out and slice into pieces. Serve.
