Pudding with Dried Fruit and Rice
1. Rinse rice; cook in water for 2 minutes and drain. Pour 1 measuring cup of milk and vanilla essence to cook rice. Marinate mixed dried fruit in rum. 2. Whisk egg yolks, add sugar and whisk thoroughly. Pour in remaining milk, cook mixture into dilute custard cream by stewing separately over water. 3. Mix gelatine powder with some water. Add into the custard cream and stir. Mix with rice and well. Put in cream and mixed fruit when become semi-congealed. 4. Place fruit flavoured jelly in bowl; chill in freezer till congealed. Pour in the pudding ingredients, chill for 2 hours. Serve. |
