Ingredients for Crispy Pork with Chilli Lime Sauce

4 lemongrass stalks
2 tbsp vegetable oil
400g lean pork mince
2 tbsp soft brown sugar
1 clove of garlic, finely chopped
1 small red chilli, deseeded and finely chopped
3 limes, juice only (about 125ml)
1 tbsp fish sauce
1 small red onion, finely chopped
small bunch of coriander, chopped
4 little gem lettuce, leaves separated

Directions for Crispy Pork with Chilli Lime Sauce

1. Cook the sauce: Slice off the bottom and top third of the lemongrass and finely chop the soft inner part. Fry the lemongrass in the oil for 2 minutes, until soft. Add the mince and let it brown before breaking it up, then cook thoroughly. Stir in 1 tbsp sugar, then take off the heat. 2. Make the dressing: Crush the garlic, chilli and remaining 1 tbsp sugar to a paste with a mortar and pestle. Add the lime juice and fish sauce and pound until mixed. 3. Assemble the dish: Pour the dressing over the mince, along with the onion and most of the coriander. Spoon into the lettuce leaves and scatter over the remaining coriander.
