Description: Quick and easy, this stir-fried pork recipe is great if you need a tasty dinner on the table in a matter of minutes.

Ingredients for Stir-fried Chilli Pork

1 tbsp soy sauce
2 tbsp sweet rice wine
2 tbsp hoisin sauce
2 tsp sesame oil
1 tsp chilli flakes
800g pork fillet, cut into 5mm slices
3 tbsp mild flavoured oil
4 garlic cloves, crushed with the flat of a knife
3 red chillies, cut in half lengthways and deseeded, stalks left on
6 bulb spring onions, halved, or 1 small red onion, cut into wedges
1 tbsp soy sauce
2 tbsp granulated sugar
2 tbsp roasted peanuts

Directions for Stir-fried Chilli Pork

1. Mix together the soy sauce, sweet rice wine, hoisin sauce, sesame oil and chilli flakes in a shallow dish. Add the pork, toss to coat and leave in the fridge to marinate for 15 minutes. 2. Heat a wok over high heat and add 1 tbsp oil. When smoking, add half the pork and stir-fry for 1-2 minutes. Remove from the pan. Repeat this step for another 1 tbsp oil. 3. Heat the remaining 1 tbsp oil and add the garlic, chillies, onions and 1 tbsp water. Stir-fry for 3-4 minutes, then cover the wok for 2 minutes. Add the soy sauce and sugar, then return the pork to the wok. Cook for 1 minute. Sprinkle over the roasted peanuts and serve with steamed rice.
