Ingredients for Chinese Curry Noodle Soup

 1 jar of Chinese curry cooking sauce

 1 x 400ml can of coconut milk

 150g dried rice noodles

 100g savoy cabbage, finely shredded

 100g frozen peas

 100g mange tout peas

 a handful of beansprouts, to garnish

 6 spring onion, shredded, to garnish

Directions for Chinese Curry Noodle Soup

1. In a saucepan, heat the Chinese curry cooking sauce and coconut milk together until simmering. Add the vegetables and simmer until tender. Meanwhile, soak the noodles in boiling water until al dente.

2. Once the vegetables are tender, divide the noodles between the four bowls and top with the vegetables and sauce. Garnish with beansprouts and spring onions.
