Spiced Honey Chicken Wings

Description: Be prepared to get very sticky when you eat these stir-fried wings, as the best way to enjoy them is by eating them with your fingers. Provide individual finger bowls for your guests.

Ingredients for Spiced Honey Chicken Wings

 1 red chilli, finely chopped

 5ml/1 tsp chilli powder

 5ml/1 tsp ground ginger

 rind of 1 lime, finely grated

 12 chicken wings

 60ml/4 tbsp sunflower oil

 15ml/1 tbsp fresh coriander, chopped

 30ml/2 tbsp soy sauce

 50ml/3½ tsp clear honoey

 lime rind and fresh coriander sprigs, to garnish


Directions for Spiced Honey Chicken Wings

1. Mix the fresh chilli, chilli powder, ground ginger and lime rind together. Rub the mixture into the chicken skins and leave for at least 2 hours to allow the flavours to peneetrate.

2. Heat a wok and add half the oil. When the oil is hot, add half the wings and stir-fry for 10 minutes, turning regularly until crisp and golden. Drain on kitchen paper. Repeat with the remaining oil and chicken wings.

3. Add the coriander to the hot wok and stir-fry for 30 seconds, then return the wings to the wok and stir-fry for 1 minute.

4. Stir in the soy sauce and honey, and stir-fry for 1 minute. Serve the chicken wings hot with the sauce drizzled over them and garnished with lime rind and coriander sprigs.
