Ingredients for Coconut Snow Ball

 8oz glutinous rice flour

 ¾ cup water

 2oz wheat starch

 2oz boiling water

 2oz lard

 1½oz sugar

 4oz dessicated coconut

 4oz peanut

 8oz sugar

 a few red cherries for decoration

Directions for Coconut Snow Ball

Cooking Tip

Any kind of sweet paste can be used for filling.

1. Sift glutinous rice flour on table. Pour in water slowly and knead into soft dough.

2. Sift wheat starch in a mixing bowl. Pour in boiling water and stir well immediately.

3. Knead both doughs together with sugar and lard. Mix well.

4. Steam 2/3 of dough for 15 minutes. Take out and knead together with the other 1/3 dough.

5. Saute and grind peanuts. Mix with sugar and dessicated coconut for filling.

6. Cut dough into 32 to 40 small pieces. Press and shape into small nests and fill each with filling. Draw edges together to enclose.

7. Put snow balls into steamer and steam for 3 minutes. Decorate each with a piece of cut cherry.
