Ingredients for Vanilla Sponge

8oz flour
2 oz custard powder
2 tsp baking powder
½ tsp bicarbonate soda
½ tsp vanilla essence
6 eggs
12oz sugar
5oz lard
20 olive kernels

Directions for Vanilla Sponge

1. Sift flour, custard powder, baking powder, and bicarbonate soda together twice, then leave aside. 2. Beat eggs in a bowl, add in sugar gradually and continue beating until mixture is light and fluffy. 3. Sift dry ingredients and fold into the egg-mixture. Add vanilla essence. Leave aside for 30 minutes. 4. Heat lard into a fluid form. Gradually add into the batter. 5. Line two pieces of greased paper in a square, then put into steamer. Pour batter in and steam for about 50 minutes. Arrange olive kernels for decoration |
